- 1 1/2 lbs chopped and cooked red potatoes with peel
- 3 slices cooked and crumbled turkey bacon
- 1/4 cup low fat mayo
- 2 tb red wine vinegar
- 2 tb parsley chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 c scallions chopped
Toss together and refridgrate over night! serves 4 3/4 cup servings at 4 points each!
