- 2 lbs potatoes chopped, cooked and cooled
- 2 lg hard boiled eggs
- 2 tsp apple cider vinegar
- 1/2 cup fat free plain greek yogurt
- 1/2 c fat free mayo
- 1 1/2 tsp splenda
- 3 tbl sweet relish
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 c chopped celery
- 1/3 c chopped red onion
In a large bowl mash one egg yolk with vinegar till smooth. Then add yogurt and mayo and mix chop the other egg and throw in the rest and coat potatoes . Refrigerate over night
serves 8 3/4 cup servings at 2 points each!
